BAKED APPLE PANCAKE

Preheat oven to 425°

Core and thinly slice 6 apples (you can leave the skin on)
Melt 1/2 cube butter in a 9x13" pyrex baking dish
When butter is melted, add the apples in neat layers
Bake the apples till they start to sizzle and just soften

While the apples are baking, prepare the batter:

In a med bowl, whisk together 6 eggs, 1 1/2 cup milk and 1 tsp vanilla
In a large bowl, thorougly mix 1 cup flour, 3 T sugar, 1/2 tsp salt and 1/4 tsp cinnamon
Add the wet ingredients to the dry ingredients and whisk till smooth
Remove the baking dish from the oven (the apples should be sizzling now) and pour the batter over the apples. Sprinkle 2-3 T brown sugar on top.

Return the dish to the oven and bake for approximately 20 minutes. Serve warm and enjoy!

COMMENTS

This was so easy and delicious. I didn't even make the batter correctly and it still came out delicious. I did not have time to neatly layer the apples so I just dumped them in and hoped for the best. It was not very pretty but it still baked evenly. Also, I used soy milk instead of milk. I can't wait to make it (and eat it) again! Next time I might try adding the cinnamon to the apples and butter and tossing it a bit more to coat the apples.
