mix in a bowl:
3 cups flour
1/4 teaspoon yeast
1 1/4 teaspoon salt
add:
1 5/8 cup water
stir together. will be shaggy.
cover and let sit 12-18 hours
uncover. dough is ready for second rise when bubbly at the top.
dust hands and dough, turn it a couple times until it's a ball of dough.
rubber spatula helps if you have one.
cover and let sit two hours.
preheat oven to 450
preheat some kind of pot or dish with a cover
grease the pot or dish, or put flour or cornmeal on the bottom.
bake covered for 15-30 minutes.
usually takes 30 or more.
very adaptable recipe. add rosemary, cheese, sea salt, you get the idea.
