Chunky Apple Oatmeal Pancakes
from Jan Laus of Tuscaloosa, AL

3/4 C whole wheat flour (I used spelt)
1/3 C oats
2 T oat bran
1/2 tsp. cinnamon
2 tsp. baking powder
1/4 tsp. salt
1/4 C sunflower seeds and/or chopped walnuts
1/4 C raisins
1/2 large apple, peeled and chopped (about 1/2 C)
1 C apple juice

Combine dry ingredients. Add nuts, raisins and chopped apple.  Stir the apple juice into the dry ingredients until well mixed.  Then pour batter by 1/4 cupfuls onto a hot, oiled griddle.

 
 
Cook until bottom is brown and you can easily turn them with a spatula. Brown on both sides.  this makes about 8-- 3 inch pancakes;

Delicious with butter, maple syrup and fresh pineapple!
