COCOA & DATE BALLS (Sugar free/Gluten Free)

INGREDIENTS

1 1/2 cups raw nuts (almonds, walnuts, cashews work well)
1/4 cup cocoa powder
1 teaspoons vanilla
1/4 teaspoon sea salt
1 cup pitted dates
1 cup water
Coconut flakes for coating

DIRECTIONS

In a small pan, bring 1 cup of water to boiling. After boiling point, take the pan off the heat and put in the dates for soaking.

In the meantime...

Line a cookie sheet with parchment paper, and put about a half cup of coconut flakes in a shallow bowl.

In a large food processor, grind the nuts to a meal-like texture.

Drain most of the water from the dates leaving a little. Add the dates, cocoa powder, vanilla, and salt to the nuts, and process on low until ingredients are blended and sticking together in a dough-like formation.

Using a spoon or your hands, scoop out the cocoa/date mixture (about a tablespoon at a time) and roll into balls. Roll the cocoa/date balls in the coconut flakes to coat evenly. (You may also use cocoa powder if you don't like coconut.)

Refrigerate or freeze the balls until cold and firm. Store them in a lidded container for up to a month.
