You Say Tomato, I Say Salsa!

What to do with loads of summer tomatoes? Here are a couple suggestions for fresh tomatoes, and we welcome more!

 

TOMATO & CILANTRO SALSA (amounts are variable and according to taste)

Chop 4-5 ripe tomatoes
Mince a handful or so of cilantro
Finely chop about 1/3-1/2 cup of onion or scallions (I prefer scallions or a milder onion)
Mix with 2 tablespoons of olive oil and 1 tablespoon of vinegar (apple cider, red wine or whatever you prefer).
Add a tablespoon or more of hot sauce
Optional lemon juice and/or crushed garlic clove
S&P to taste

 

 

 

FRESH TOMATO, BASIL & FETA PASTA SALAD

Yesterday I chopped up some tomatoes from our garden into small chunks, mixed it with some fresh chopped basil, feta, sea salt, fresh ground pepper and olive oil. Then I tossed it with some steaming hot fusilli pasta. It was delicious and so easy. It would have been even better with fresh pasta and really nice olive oil, but in this economy, even the cheap stuff will do.

You may substitute fresh mozzeralla for the feta, or try with spinach instead of or in addition to the basil.
