FRUITY RICE WITH MUSHROOMS
adapted from a Russian recipe: www.ruscuisine.com/mushrooms
from Carola Penn of Portland, OR

2 cups basmati rice
1 cup total dried fruits, your choice: apricots, raisins, sour cherries, apples, cranberries, dates, prunes
1 cup sliced mushrooms
1⁄2 cup roasted almonds
cinnamon, salt & pepper

Cook the rice in 4 cups boiling water.

When almost done add fruit.

Mushrooms can be sautéed first in butter or added uncooked to the rice.

Add the almonds.

Season with 1 tsp cinnamon, salt and pepper.
